Seasoned Rice Cooked with Beef, Burdock Root, and Yukiguni mushrooms

Ingredients(serves 4)
  • 1 pc Yukiguni Maitake
  • 1 pc Yukiguni Shimeji
  • 200 g beaf, sliced
  • 1/4 burdock
  • 1/4 carrot
  • 1/2 konjac
  • 300 g rice
  • As desired Mitsuba (Japanese parsley)
  • Seasoning(A)
  • 1.5 tbsp soy sauce
  • 1 tbsp sweet sake
  • 2 tsp Japanese broth powder
Directions
  • ❶Cut mushrooms into bite-size pieces.
  • ❷Cut beaf roughly and put on the sieve and pour hot water quickly on it.
  • ❸Shave burdock and put in water, and cut carrot into thin strips. Cut konjac into thin rectangles and pour hot water on it to remove the harshness.
  • ❹Cook rice with (A),①,②,③.
  • ❺After cooked, dish up and put basil on it.

Yukiguni Mushroom Tempura

Ingredients(serves 2)
  • 1/2 pc Yukiguni Maitake
  • 1/2 pc Yukiguni Shimeji
  • 50 g lotus root (peel and cut into 5mm thick, and soak in vinegar)
  • 50 g sweet potato (cut diagonally into 5mm thick, and soak in water)
  • 80 g pumpkin (cut into 6-7mm thick)
  • 4 pieces green pepper
  • 1 cup tempura flour
  • 250cc water
Directions
  • ❶Cut mushrooms into bite-size pieces.
  • ❷Mix water and tempura flour to make the batter.
  • ❸Drain off the moisture of lotus root and sweet potato.
  • ❹Put the items into the batter, and fry at moderate temperature.

Miso Soup of Yukiguni Mushrooms

Ingredients(serves 4)
  • 1 pc maitake mushrooms
  • 1 pc eringi mushrooms
  • 1 pc shimeji mushrooms
  • 150 g pork belly, sliced in 3 cm
  • 1 konjac, boiled and cut
  • 1 burdock, diagonally thin cut
  • 1/3 radish, quarter sliced
  • 1 carrot, half sliced
  • 1 long onion, green part cut small and white part cut in 1 cm
  • 5 cups water
  • proper quantity miso
  • 1/2 tbsp sesame oil
  • a little Japanese seven blended spices
Directions
  • ❶Put sesame oil in the pot. Saute pork belly and add vegetables and saute.
  • ❷Add water and boil around 15 minutes while skimming the foam.
  • ❸Add long onion and boil a bit, and add miso.
  • ❹Serve in the bowl, and put long onion and seven blended spices as you like.

Egg Udon with Yukiguni Maitake

Ingredients(serves 2)
  • 1 pc maitake mushroom, chopped
  • 40 g carrot, cut into thin rectangles
  • 1/2 fried tofu, cut into thin rectangles
  • 2 melted eggs
  • 2 portions frozen udon
  • a little green onion, chopped
  • a little ginger, grated
  • 1000 cc soup stock
  • Seasoning (A)
  • 2 tbsp soy sauce
  • 1.5 tsp salt
Directions
  • ❶Boil soup stock and carrot in the pod. Add maitake and fried tofu and (A), and boil again.
  • ❷Add melted eggs.
  • ❸Dish boiled udon in the bowl and pour ②.
  • ❹Put green onion and grated ginger.

Stir-fried Maitake with Pea Sprouts and Eggs

Ingredients(serves 2)
  • 1 pc Yukiguni Maitake
  • 1 portion pea sprouts
  • 2 eggs
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce (A)
  • 1 tbsp cooking sake (A)
  • 2 tsp oyster sauce (A)
  • 1 tsp sugar (A)
Directions
  • ❶Tear the Yukiguni Maitake into bite-sized pieces. Cut off the roots of the pea sprouts and wash them.
  • ❷Put sesame oil in a frypan and heat at high temperature.
  • ❸Pour beaten egg into the pan and stir quickly. After it is halfway cooked, remove and put on a plate.
  • ❹Place Maitake and pea sprouts that you prepared in step 1 into the frypan you used in step 2.
  • ❺Add (A) to the frypan and mix ingredients together. Then, add the egg cooked in step 3 back into the frypan. Your dish is now ready to eat.

Maitake and Seaweed Soup

Ingredients(serves 4)
  • 1 pc Yukiguni Maitake
  • 5 g dried seaweed
  • 15 cm long onion
  • 800 ml water (A)
  • 2 tsp chicken stock powder (A)
  • 2 tsp soy sauce (B)
  • Dash of salt (B)
  • 1 tbsp roasted white sesame
  • 1 tbsp sesame oil
Directions
  • ❶Tear the Yukiguni Maitake into bite-sized pieces. Soak the dried seaweed in water for a while and then drain. Chop the long onion.
  • ❷Put sesame oil in the pot and heat it.
  • ❸Add Maitake and seaweed, and fry them for 1 to 2 minutes.
  • ❹Add (A) and boil. Then, add (B) and turn off the heat.
  • ❺Pour the soup in a bowl, and sprinkle the onions and white sesame.

Gapao Rice of Mushrooms
(Phad Bai Gaprao)

Ingredients(serves 2)
  • 1/2 pc Yukiguni Maitake, cut
  • 1/2 pc Yukiguni Shimeji, cut
  • 300 g minced chicken
  • 50 g onion, shredded
  • 18 g green pepper, shredded
  • 1 clove garlic
  • 1 piece red pepper, shredded
  • As desired dry basil
  • 2 tbsp oyster sauce
  • 2 tbsp Nam pla
  • 1/2 tbsp sugar
  • a little salt
Directions
  • ❶Fry the garlic and red pepper lightly. Add the chicken, onion and green pepper and mushrooms and saute all.
  • ❷Add oyster sauce, Nam pla and sugar and salt. Lastly add the dry basil and saute lightly.
  • ❸Dish up with rice and fried egg and salad you like.

Korean style Mixed Rice with Yukiguni Maitake & Bean Sprouts

Ingredients(serves 2)
  • 1 pc maitake mushrooms, cut into bite-sized pieces
  • 100 g cut vegetables (bean sprouts, cabbage)
  • 160 g ground meat
  • 2 egg yolks
  • 20 g kimchi
  • 2 bowls rice
  • 1 tbsp sesame oil
  • 1 tsp gochujang
  • 1 tsp sugar
  • 1 tsp soy sauce
Directions
  • ❶Put maitake and vegetables on the heat resistant dish and wrap in plastic wrap, then wicrowave for one or two minutes.
  • ❷Put sesame oil in the frypan, and saute ground meat. Season with gochujang, sugar, and soy sauce.
  • ❸Serve rice in the bowl, and put ①, ②, kimchi, and egg yolks.

Chicken Curry with Yukiguni Mushrooms

Ingredients(serves 4)
  • 1 pc maitake mushroom, chopped roughly
  • 1 pc eringi mushroom, chopped roughly
  • 500 g chicken leg, cut into bite-sized pieces
  • 2 cans boiled tomato
  • 200 cc milk
  • 60 g butter
  • a little salt and pepper
  • Seasoning (A)
  • 5 tbsp curry roux mix
  • 200 cc yogurt
  • 2 tsp garlic, grated
  • 2 tsp ginger, grated
  • a little salt
Directions
  • ❶Pickle chicken leg in (A) for 30 minutes.
  • ❷Boil mushrooms and boiled tomato and butter, and add ① and boil.
  • ❸Add milk and season with salt and pepper.

Salt-fried Noodles with Maitake

Ingredients(serves 2)
  • 1 pc Yukiguni Maitake
  • 120 g bean sprouts
  • 1/2 stalk green onion
  • 60 g meat (pork, chicken, or any other meat that you like)
  • 1 portion Chinese noodles
  • 2 tsp. chicken stock powder
  • Dash of salt
  • Dash of pepper
  • 1 tsp. salad oil
Directions
  • ❶Tear the Yukiguni Maitake into bite-sized pieces. Slice the green onion thin and diagonally. Cut the meat into bite-sized pieces, and sprinkle salt and pepper onto the meat.
  • ❷Put salad oil into the heated frypan, and fry the pork at medium heat while breaking apart the clumps.
  • ❸When the pork is cooked, add Maitake, bean sprouts, and green onion, and fry them together.
  • ❹When all the ingredients are cooked, add noodles and keep frying.
  • ❺Add the chicken stock powder and salt for flavor. Your dish is ready to eat.

Dumpling Pot with Maitake

Ingredients(serves 3 to 4)
  • 2 pcs Yukiguni Maitake
  • 400 g vegetables of your
  • choice (green onion, carrots, Chinese chives, cabbage, Chinese cabbage, etc.)
  • 15 dumplings
  • 1,200 ml water (A)
  • 3 tbsp. chicken stock powder (A)
  • Sesame oil, as needed
Directions
  • ❶Tear the Yukiguni Maitake into bite-sized pieces. Cut the vegetables into bite-sized pieces.
  • ❷Put (A) in the pot and heat.
  • ❸When they simmer, add the ingredients from step 1.
  • ❹Wait until the soup simmers again, and then add the dumplings.
  • ❺When all the ingredients are cooked, pour over sesame oil. The dish is ready to be served.

Chinese-style Salad with Maitake & Cabbage

Ingredients(serves 4)
  • 2 pcs Yukiguni Maitake, cut
  • 200 g cabbage, cut roughly
  • 50 g snow peas, streaks pulled out
  • 300 g pork loin
  • Seasoning(A)
  • 3 tbsp peanut butter (unsalted)
  • 2 tsp doubanjiang
  • 1 clove garlic, grated
  • A little green onion, chopped
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 1 tbsp water
  • 1 tsp sugar
Directions
  • ❶Mix the seasoning(A).
  • ❷Boil the pork loin piece by piece in hot water and put on the colander.Remove foam from the pot. Put a little salt in the pot and boil snow peas and cabbage and Maitake by turns. Dish up and pour ①.

Ingredients(serves 1)
  • 1 pc maitake mushrooms, cut into bite-sized pieces
  • 1 pc cut vegetables (cabbage, carrot)
  • 80 g beef, sliced
  • 1 clove garlic, chopped
  • 1 clove ginger, chopped
  • 1 tbsp salad oil
  • Seasoning (A)
  • 1 tsp red miso
  • 2 tsp sake
  • 1/3 tsp bean plate sauce

  • ❶Put salad oil in the frypan. Saute garlic and ginger, and add beef and saute.
  • ❷Add maitake and vegetables and saute.
  • ❸Put (A) and mix.

Aglio e Olio Peperoncino Pasta with Yukiguni Mushrooms

Ingredients(serves 3 to 4)
  • 1 pc Yukiguni Maitake
  • 1 pc Yukiguni Shimeji
  • 1 pc Yukiguni Eringi
  • 200 g pasta
  • Seasoning(A)
  • 2 clove garlic, sliced
  • a little salt and pepper
Directions
  • ❶Put the salt in boiling water, and boil the pasta.
  • ❷Put olive oil in the frypan, and saute garlic and red peppers at low heat.
  • ❸Add mushrooms and saute lightly at medium heat.
  • ❹Add boiled pasta into ③ and mix, and season with salt and pepper.

Salmon Cream Pasta with Yukiguni Maitake

Ingredients(serves 2)
  • 1 pc maitake mushroom, chopped
  • 2 pieces salted salmon
  • 140 g fettuccine
  • 1/4 cabbage
  • 1/2 carrot
  • 2 tbsp flour
  • 200 cc milk
  • 20 g butter
  • a little pepper
Directions
  • ❶Cut salted salmon into bite-sized pieces and coat with flour.
  • ❷Put the salt in boiling water, and boil the pasta.
  • ❸Put butter in the frypan, and saute the salmon lightly and add maitake mushroom and cabbage and carrot and milk and boiled pasta, and mix at low heat.
  • ❹Lastly put pepper as you like.

Ingredients(serves 2)
  • 1 pc maitake mushrooms, cut into bite-sized pieces
  • 1 green pepper, round sliced
  • 2 or 3 pieces bacon, cut into 1 cm width
  • 2 slices toast
  • proper quantity pizza sauce
  • proper quantity pizza cheese
Directions
  • ❶Spread pizza sauce on toasts.
  • ❷Put pizza cheese, maitakes, green pepper, bacon on them, and bake in the oven around four minutes.

Ingredients(serves 2)
  • 1/2 pc maitake mushrooms
  • 1/2 pc eringi mushrooms
  • 1/2 pc shimeji mushrooms

  • 1/2 bell pepper(yellow)
  • 10 mini tomatoes, cut into half
  • 1 clove garlic, sliced
  • 1 tbsp olive oil
  • 400 cc water
  • 50 cc white wine
  • a little salt and pepper
Directions
  • ❶Cut mushrooms and vegetables into bite-sized pieces.
  • ❷Put olive oil in the pot. Saute garlic lightly and add ① and saute.
  • ❸Add water and white wine to ②, and boil a little and season with salt and pepper.

Beef Steak with Yukiguni Maitake Sauce

Ingredients(serves 4)
  • 1 pc maitake mushroom, chopped
  • 4 beef steak meat
  • 1/2 onion, sliced
  • a little salt and pepper
  • Seasoning (A)
  • 2 tbsp soy sauce
  • 10 g butter
Directions
  • ❶Put maitake and beef steak meat in sealed plastic bag, and rub them lightly together. Keep it 20-30 minutes at room temperature. (Or 1 to 2 hours in refrigerator. This makes meat softer.)
  • ❷ Take out beef steak meat and season with salt and pepper. Put salad oil in the frypan, and saute beef steak meat.
  • ❸Dish the steaks. Take the oil off the frypan.
  • ❹Saute maitake and onion in the frypan, and put (A) and boil down. Put them on the steaks.

Grilled Sea Bream and Yukiguni Mushrooms in Foil

Ingredients(serves 2)
  • 1/2 pc maitake mushrooms
  • 1/2 pc shimeji mushrooms
  • 2 asparagus
  • 2 mini tomatoes, cut into half
  • 2 fillets sea bream
  • 2 tsp salted koji
  • 1 tbsp white wine
  • proper quantity olive oil
Directions
  • ❶Cut aluminum foil into 30 cm squares.
  • ❷ Spread olive oil on ①, and put sea bream and dust salted koji. Add vegetables and pour white wine.
  • ❸Wrap in aluminum foil, and bake on toaster for 15 to 20 minutes.

Grilled Mashrooms and Vegetables with Mayonnaise & Cheese

Ingredients(serves 2)
  • 1/2 pc maitake mushrooms
  • 1/2 pc eringi mushrooms
  • 1/2 pc shimeji mushrooms
  • 1/3 broccoli
  • 1/3 cauliflower
  • 4 shrimps
  • 3 tbsp mayonnaise
  • 3 tbsp cheese powder
  • a little salt and pepper
Directions
  • ❶Cut mushrooms and vegetables into bite-sized pieces.
  • ❷Boil lightly shrimps and broccoli and cauliflower together.
  • ❸Put mushrooms and ② in the bowl and add mayonnaise and mix. Season with salt and pepper.
  • ❹Put ③ in the heat resistant dish and dust cheese powder, and cook in the oven for five or eight minutes.

Marinade of Yukiguni Mushrooms

Ingredients
  • 1 pc maitake mushrooms
  • 1 pc eringi mushrooms
  • 1 pc shimeji mushrooms
  • 3 tbsp olive oil
  • 3 tbsp vinegar
  • 1 tsp salt
  • A little pepper
Directions
  • ❶Cut mushrooms into bite-sized pieces.
  • ❷Put ① in the heat resistant dish and season with olive oil, vinegar, salt, and pepper, and wrap in plastic wrap.
  • ❸Microwave it at 500 watts for 5 minutes.
  • ❹Then stir lightly and cool in the refrigerator.
