New Value Creation with Mushrooms

Policies and Strategies

As it becomes increasingly difficult to secure a workforce due to the declining birthrate and aging population, at Yukiguni Maitake, we strive to evolve our plants into highly efficient plant using the latest technology, and to invest in and utilize intellectual property and intangible assets in production technology.

Initiatives

Factory Automation of Production Processes

We are promoting the enhancement of productivity through cost reductions and labor savings by introducing further factory automation technologies for production processes, such as inoculation, harvesting, and packaging, and by evolving our plants into highly efficient plants.

Development of Alternative Meat that Uses Mushrooms as Its Main Ingredient

We have succeeded in developing alternative meat that uses mushrooms as its main ingredient.
Alternative meat products that use soybean-derived ingredients as their main ingredient have become the mainstream in the current alternative meat market. However, the product we have developed is a new health-oriented product that pursues natural taste as well as takes advantage of the characteristics of its main ingredient, mushrooms, such as low calories, low fat, and dietary fiber.
In addition, we believe that this product has the potential to be widely supported also from a food safety perspective, because the main ingredient of this product is our mushrooms produced under strict quality management.
Furthermore, we will work to develop a new proprietary product that combines mushrooms and alternative meat as raw materials.
